The much-anticipated reopening of the Beatrice Inn is dragging on. Vanity Fair’s Graydon Carter — along with partners Emil Varda, Brett Rasinski and former Per Se chef Brian Nasworthy — were initially set to launch their democratic steakhouse version of the former underground hot spot frequented by Sevignys, Ronsons and Olsens in late May, but pushed back the opening to August. With September looming but still no official opening date announced, Carter’s rep tells us, “They are planning a soft opening soon, but have not yet set an opening date.” A call to the restaurant leads to an automated message telling callers it’ll begin taking reservations Sept. 3.
