Not only did the Four Seasons restaurant part ways last week with Fabio Trabocchi, its high-profile chef, after only three months, we’ve learned that handsome dining room manager James Olson, who manned the podium at the top of the stairs in the Grill Room, has ditched the landmark eatery. Olson has been tapped as general manager of the new Tavern on the Green (or whatever it’s going to be called) by new license holder Dean Poll once Poll finally makes a deal with the union and the city.
