EVERY desert needs an oasis — even Congress, Arizona. Fans of popular East Hampton celebrity watering hole Nichols can now drop into Nichol’s West in the tiny cowpoke outpost. Owners Simon Smith and Janet Palmer sold the East End version last year and just opened the new one, making the name almost bicoastal. So far, Hamptons regulars like Alec Baldwin, Steven Spielberg and Paul McCartney have yet to drop by. But McCartney did call in a “Cheers!” just prior to the opening, according to Smith, who chuckled, “The contractor who answered the phone was very impressed.”
